I can relate! When I was in college studying physiology, wellness and nutrition, I mainly ate tortilla chips and Snackwells cookies and because they were fat free!! Gimmicks are everywhere and I easily fell prey to the idea that eating fat would make me fat. Even with a degree in this stuff under my belt, I struggled to be healthy. I lacked the tools and strategies, and had no idea where to start. When I was little, my mom was super dedicated to feeding us healthy food - my lunches at school were pinterest worthy - everyday a fresh, colorful, creative array of options. I had a homemade hot breakfast each morning and a gourmet dinner each night. But, when I was on my own, I had to learn everything from scratch…and it was tough! I was a freshman in college when I learned how to do a load of laundry. I had no idea how to boil water, let alone cook. I wanted to eat healthy, but when I would search for inspiration, all I would find were restrictive diets! It was so overwhelming. I started to associate guilt with eating instead of enjoyment or empowerment.
By trial and error, I found my groove. I found that healthy could be delicious and simple. I didn’t have to be “good” at cooking to make satisfying and tasty meals. I learned that moderation was the key to enjoying life and eating. I realized that food prep was crucial to my success because when I would wait until I was hungry to consider what to eat, the wheels would fall off. Protein pancakes for the win! I learned that carbs and fat were good for me, but that veggies and protein were must-haves at most meals.
