Olive Oil Sweet Potato Cake
Don’t let the name through you off - it might not sound like an obvious treat, but trust me—it's subtly sweet, perfectly moist, and absolutely delicious. One bite, and you'll be hooked!
Ingredients:
⅔ cup olive oil
1 cup cooked and blended sweet po
1 cup maple syrup*
¼ cup coconut sugar
3 eggs
1 tsp vanilla extract
1.5 cups almond flour
1 cup oat flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
*for lower glycemic index, use 1/2 cup date syrup + 1/2 cup allulose
Instructions:
Preheat oven to 350 degrees
In a large bowl, combine olive oil - through vanilla
Add flours and baking powder, soda and salt
Fold dry into wet
Transfer to oiled round 9in cake pan
Bake 50-60 min or until toothpick comes out clean.
