Olive Oil Sweet Potato Cake

Don’t let the name through you off - it might not sound like an obvious treat, but trust me—it's subtly sweet, perfectly moist, and absolutely delicious. One bite, and you'll be hooked!


Ingredients:

  • ⅔ cup olive oil

  • 1 cup cooked and blended sweet po

  • 1 cup maple syrup*

  • ¼ cup coconut sugar

  • 3 eggs

  • 1 tsp vanilla extract

  • 1.5 cups almond flour

  • 1 cup oat flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • ½ tsp salt

    *for lower glycemic index, use 1/2 cup date syrup + 1/2 cup allulose

Instructions:

  1. Preheat oven to 350 degrees

  2. In a large bowl, combine olive oil - through vanilla

  3. Add flours and baking powder, soda and salt

  4. Fold dry into wet

  5. Transfer to oiled round 9in cake pan

  6. Bake 50-60 min or until toothpick comes out clean.
