Salmon Cakes

Salmon Cakes

I love to make these for lunches / dinner if we need a quick protein option. You can use tuna or salmon. The hummus holds the cake together, and I love the addition of almond flour instead of regular flour.


Ingredients

  • 1 pouch salmon (5oz)

  • 1 egg, beaten

  • ¼ cup hummus

  • ⅓ cup almond meal / almond flour

  • ½ lemon, juiced

  • 2 green onions

  • salt and pepper

Instructions

  • Mix everything together, and form into patties

  • Heat oil in skillet and cook patties until golden brown, about 3-4 min / side
