Five Minute Mexican Bowl

If you have only a few minutes to throw together a crowd-pleaser meal, this is your savior! Flavorful and simple. Well-balanced and filling. Simple and delicious!


Ingredients

  • Ground chicken with salsa

  • Microwave bag of rice / quinoa / etc

  • Kale - torn into bite-size pieces

  • Olive Oil or Avocado oil

  • Green Goddess Dressing

Instructions

  • Heat 1 TB oil in a medium sautee pan

  • Brown the ground chicken, stirring every few minutes until you can see no more pink

  • Once the meat is cooked all the way through, add a ½ cup to 1 cup of salsa and mix well. Turn off heat.

  • Meanwhile throw in a bag of 90 sec rice / quinoa in the microwave - be sure to vent the bag.

  • Put kale in a bowl and add 1 TB avocado oil or olive oil (or half of an avocado)

  • Massage the kale with your hands for 2-3 minutes.

  • Throw everything together and top with Green Goddess dressing
