Spaghetti Squash Bowls
Spaghetti Squash Bowls
Simple, delicious, filling and NOT time-consuming!
Ingredients
• 2 medium spaghetti squash
• 1 package of ground chicken (I used the one with Italian seasoning)
• 3 large carrots, peeled and chopped
• 1/2 onion, chopped
• 4-5 cloves garlic
• 2-3 cups tuscan kale (lacinato kale)
• olive oil
• salt
• marinara sauce (I used roasted garlic pasta sauce)
Instructions
cut squash in half and drizzle with olive oil, sprinkle salt and pepper
Bake at 400 for 40 minutes or until browned and tender
sautee garlic, onions, carrots in olive oil
add chicken and cook until browned
stir in kale and turn heat to low
add marinara sauce and stir to mix
let squash cool until you can handle them - and with a fork, gently pull apart the strands of the squash
fill each squash “bowl” with the filling
top with parmesan cheese or nutritional yeast
