Spaghetti Squash Bowls

Simple, delicious, filling and NOT time-consuming!


Ingredients

• 2 medium spaghetti squash

• 1 package of ground chicken (I used the one with Italian seasoning)

• 3 large carrots, peeled and chopped

• 1/2 onion, chopped

• 4-5 cloves garlic

• 2-3 cups tuscan kale (lacinato kale)

• olive oil

• salt

• marinara sauce (I used roasted garlic pasta sauce)

Instructions

  • cut squash in half and drizzle with olive oil, sprinkle salt and pepper

  • Bake at 400 for 40 minutes or until browned and tender

  • sautee garlic, onions, carrots in olive oil

  • add chicken and cook until browned

  • stir in kale and turn heat to low

  • add marinara sauce and stir to mix

  • let squash cool until you can handle them - and with a fork, gently pull apart the strands of the squash

  • fill each squash “bowl” with the filling

  • top with parmesan cheese or nutritional yeast

  • Enjoy!
