Chocolate Tofu Pie

I have been making this dessert for special occasions for over 20 years. It’s simple, delicious, vegan and no one ever guesses the “secret” ingredient. My girls request this for birthdays and holidays - it’s that good!


Ingredients

  • 9 inch prepared pie crust (walnut and pecan crusts work well, or graham cracker crust) or make your own by pulsing 2.5 cups nuts in a food processor with 3-4 tablespoons of coconut oil 

  • 1 lb of silken tofu

  • 12 oz dark chocolate chips (melted)

  • (optional) add 3 tablespoons of liquor - Kahula, Baileys, Cointreau

Instructions

  1. Melt chocolate in the microwave (microwave 30 seconds and stir, repeat until completely melted and smooth)

  2. Put tofu the food processor, and then add the melted chocolate to tofu while the food processor is running.  

  3. Blend for up to 15 minutes until your mixture is the consistency of silk.  There should be no lumps or grainy texture. 

  4. Pour into crust and refrigerate for at least one hour before serving. Can be frozen.
