Simply Divine Chocolate PB Oatmeal Cookies

 

Chocolate PB Oatmeal cookies

These cookies have been a staple in my family for special occasions and family camping trips and ordinary days in between. They’re healthy-ish and a guaranteed crowd-pleaser. Gluten-free, dairy-free and easily nut-free if needed.


Ingredients

  • 3 Omega-3 eggs

  • 2 cups light brown sugar

  • ½ tsp salt

  • ½ tsp vanilla

  • 12 oz natural creamy peanut butter (sub almond butter or sunflower seed butter)

  • 1/2 cup coconut oil, melted

  • 1 cup dark Ghiradelli chocolate chips

  • 2 tsp baking soda

  • 4 ½ cups whole rolled oats

Instructions

  • Preheat oven to 350.

  • Line 2 cookie sheets with parchment paper.

  • Combine eggs and brown sugar, mix well.

  • Add salt, vanilla, baking soda, peanut butter and oil. Mix well.

  • Stir in oats and chocolate chips

  • Bake 8-10 minutes.

*Recipe makes 2 dozen cookies

*Cookies freeze great - lay flat in a ziplock bag and freeze. Be sure to take them out of the freezer a few hours before you want to serve them so they’re not frozen solid.
