Simply Divine Chocolate PB Oatmeal Cookies
Chocolate PB Oatmeal cookies
These cookies have been a staple in my family for special occasions and family camping trips and ordinary days in between. They’re healthy-ish and a guaranteed crowd-pleaser. Gluten-free, dairy-free and easily nut-free if needed.
Ingredients
3 Omega-3 eggs
2 cups light brown sugar
½ tsp salt
½ tsp vanilla
12 oz natural creamy peanut butter (sub almond butter or sunflower seed butter)
1/2 cup coconut oil, melted
1 cup dark Ghiradelli chocolate chips
2 tsp baking soda
4 ½ cups whole rolled oats
Instructions
Preheat oven to 350.
Line 2 cookie sheets with parchment paper.
Combine eggs and brown sugar, mix well.
Add salt, vanilla, baking soda, peanut butter and oil. Mix well.
Stir in oats and chocolate chips
Bake 8-10 minutes.
*Recipe makes 2 dozen cookies
*Cookies freeze great - lay flat in a ziplock bag and freeze. Be sure to take them out of the freezer a few hours before you want to serve them so they’re not frozen solid.
