Clementine Cake

Surprisingly satisfying - this dessert is healthy-ish and tastes delicious and the texture is so smooth and satisfying.


Ingredients

  • 10 clementines (cutie oranges without seeds)

  • ½ cup egg whites

  • 6 eggs

  • 2.5 cups almond flour

  • 1 cup sugar

  • 1.5 tsp baking powder

Instructions

  1. Bring a pot of water to boil, add whole clementines to the boiling water and boil for 60 minutes or until soft. Be sure to remove the stickers from the fruit.

  2. Preheat oven to 375 degrees F

  3. Line an 8-inch springform pan with parchment paper and spray with baking spray.

  4. Throw the clementines into a blender and blend on high until you reach a smooth consistency. 

  5. Add the eggs/whites, sugar, almonds, and baking powder. Blend well until all incorporated. 

  6. Pour the cake mixture into the prepared pan and bake for 1 hour, when a skewer will come out clean; you'll probably have to cover the cake with tin foil after about 40 minutes to stop the top from burning. 

  7. Remove from the oven and leave to cool, in the pan on a rack. When the cake is cold, you can take it out of the pan. 3-4 large sweet potatoes - cooked (I microwave mine because it’s easy- a typically-sized sweet potato takes 5 minutes on high in the microwave….you could also bake or boil them)

  8. Top with powdered sugar. Enjoy. Refrigerate leftovers for a yummy dessert (or breakfast) the next day.
