Salade Nicoise
Dave’s parents used to live in Paris and I fell in love with this hearty, tasty salad when we used to visit there. So flavorful and filling, but simple to prepare - just the way I like it!
Ingredients salad
2 cups mixed greens
6 oz green beans (blanced)
3 soft-boiled eggs
4-5 baby potatoes (pre boiled and sliced)
6 oz oil-packed tin fish like smoked trout, tuna or salmon
1 cup mixed olives
½ cup cherry tomatoes
2 small persian cucumbers, cut into small pieces
2 tbsp fresh basil, roughly chopped
Ingredients salad
5 tbsp lemon juice
6 tbsp olive oil
1 tsp Dijon mustard
1 tsp honey
½ tsp salt
2 tbsp fresh chives
Instructions
Blanch green beans and cook potatoes ahead of time. Allow time to cool - I usually make these the day before, so all I have to do on the day of is assemble
Start with greens and layer ingredients on plate
Drizzle with dressing and enjoy! Always a crowd pleaser, and easily adjusted to fit vegan or vegetarian lifestyle.
