Salade Nicoise

Dave’s parents used to live in Paris and I fell in love with this hearty, tasty salad when we used to visit there. So flavorful and filling, but simple to prepare - just the way I like it!


Ingredients salad

  • 2 cups mixed greens

  • 6 oz green beans (blanced)

  • 3 soft-boiled eggs

  • 4-5 baby potatoes (pre boiled and sliced)

  • 6 oz oil-packed tin fish like smoked trout, tuna or salmon

  • 1 cup mixed olives

  • ½ cup cherry tomatoes

  • 2 small persian cucumbers, cut into small pieces

  • 2 tbsp fresh basil, roughly chopped

Ingredients salad

  • 5 tbsp lemon juice

  • 6 tbsp olive oil

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • ½ tsp salt

  • 2 tbsp fresh chives

Instructions

  • Blanch green beans and cook potatoes ahead of time. Allow time to cool - I usually make these the day before, so all I have to do on the day of is assemble

  • Start with greens and layer ingredients on plate

  • Drizzle with dressing and enjoy! Always a crowd pleaser, and easily adjusted to fit vegan or vegetarian lifestyle.
