Green Green Salad
This flavorful salad is simple to make and is a great side to any main dish. It has complex flavors and is filling too.
Ingredients
2 heads of iceberg lettuce
1 bunch dill
1 bag of fresh spinach (6oz)
1 onion - chopped into chunks
8 garlic cloves
1 TB coarse sea salt
1/2 cup nutritional yeast
8 oz roasted and lightly salted cashews
1 TB agave
juice of a large lemon
Instructions
Chop iceberg lettuce into bite size pieces
Blend the rest of the ingredients in a blender or food processor on high until smooth and creamy.
Add salt, lemon juice to taste
Stir in a TB olive oil just before dressing the salad.
Add dressing and toss to combine - being sure to coat each leaf in the creamy green goodness.
Enjoy along with a main dish.
