Green Green Salad

This flavorful salad is simple to make and is a great side to any main dish. It has complex flavors and is filling too.


Ingredients

  • 2 heads of iceberg lettuce

  • 1 bunch dill

  • 1 bag of fresh spinach (6oz)

  • 1 onion - chopped into chunks

  • 8 garlic cloves

  • 1 TB coarse sea salt

  • 1/2 cup nutritional yeast

  • 8 oz roasted and lightly salted cashews

  • 1 TB agave

  • juice of a large lemon

Instructions

  1. Chop iceberg lettuce into bite size pieces

  2. Blend the rest of the ingredients in a blender or food processor on high until smooth and creamy.

  3. Add salt, lemon juice to taste

  4. Stir in a TB olive oil just before dressing the salad.

  5. Add dressing and toss to combine - being sure to coat each leaf in the creamy green goodness.

  6. Enjoy along with a main dish.
