Crockpot Turkey veggie Chili

Flavorful, simple and a crowd-pleaser! I have a crockpot that also has a sautee setting, so I brown my turkey and cook my onions in the crockpot before adding the other ingredients. One thing to clean!


Ingredients

  • 2 medium onions, minced

  • 4 medium carrots, chopped

  • 1 medium bell pepper, stemmed, seeded, and cut into ½-inch pieces

  • 2 zucchinis, chopped

  • ¼ cup chili powder

  • 1 Tbsp ground cumin

  • ½-1 tsp red pepper flakes

  • 1 tsp dried oregano

  • ¼ - ½ tsp cayenne

  • 1 ½ tsp salt, divided

  • 2 lbs 93 percent lean ground turkey

  • 2 - 15oz cans red kidney beans, drained and rinsed

  • 1 - 14.5oz can diced tomatoes

  • 1 - 15oz can tomato sauce

  • 1 - 28oz can crushed tomatoes

  • 2 cans black beans, drained

  • 1 bag fresh spinach

Instructions

  • Brown the turkey and cook the onions until translucent - if using my crockpot recommendation, this can be done in the slow cooker before you add the other ingredients.

  • Throw turkey, onions and all other ingredients into a crockpot (except the fresh spinach) and cook on low for 4-5 hours

  • About 30 min before serving, mix in the fresh spinach so it wilts.

  • Serve with corn bread, top with avocado, green onions, cilantro, sriracha, cheese etc.
