This colorful Thai noodle bowl recipe is a delicious and healthy way to get in all your macronutrients. The noodles are tossed in a creamy peanut sauce that is both sweet and savory, and the vegetables are crisp and refreshing. We all know how important protein is for our health, so it’s always a good idea to incorporate some protein into our main meals of the day. I love this dish with pan seared tofu, but it would be delicious with chicken, shrimp or even scrambled egg.

Depending on which veggies you have, you can really use anything. I love to do carrot ribbons (they look fancy and are so tender). Cabbage, spinach, and bell peppers are yummy, but feel free to use broccoli, green beans, and kale.

Secret Sauce

The sauce is really the star of this recipe. I love it with peanut butter, but you could sub almond butter or tahini too. The sauce includes soy sauce, but you could also use liquid aminos or coconut aminos. I love the creaminess of the dressing and I usually make a little extra because my family loves it!

Top It Off!

Top with crunchy sesame seeds, cilantro and garnish the plate with lime wedges. And enjoy this beautifully balanced meal.
